Fish
is one of the leading characters of my story of savors, a dominant dish that gives me security; however, it never stops stimulating my fantasy.
My best friend in the kitchen is redfish, ugly yet divine: love its cheeks!

I risotti
Their simplicity, and their delight. They are a dish that I never miss.
Unexpected contaminations, with flavors that travel from land to sea, combined by careful creaming, give the dish that unexpected strength that is released at the first taste.
It is not like I'm missing out, like a good risotto " al dente"...

The cheeses
As they say in our country: “La bocca no a xe stracca se no la sa de vacca”. which is "can't finish your meal without savoring cheese."
A nice piece of green cheese with mustard, sweet Gorgonzola accompanied by the juicy sweetness of sliced pears, Roquefort married to dried fruit, and a slice of green apple to cleanse the mouth between these explosions of flavors.
The last act, to give me a tone before getting up and greeting everyone.
